Shrimp and Zucchini Noodles

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups zucchini noodles (zoodles)
  • 1 tsp red pepper flakes
  • 1 tbsp lemon juice
  • 2 tbsp grated Parmesan cheese

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the garlic and red pepper flakes until fragrant.
  3. Add the shrimp and cook until pink, about 3–4 minutes.
  4. Toss in the cherry tomatoes and cook for another 2 minutes.
  5. Add the zucchini noodles and cook for 3–4 minutes, until tender.
  6. Finish with lemon juice and Parmesan.
