
Ingredients:
2 salmon fillets (about 6 oz each)
2 medium sweet potatoes, peeled and cubed
2 cups broccoli florets
2 tbsp olive oil
2 tsp lemon juice
1 tsp dried dill
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
Place the salmon fillets on a lined baking sheet. Drizzle with olive oil, lemon juice, and sprinkle with dill, salt, and pepper.
Bake the salmon for 15–20 minutes or until it flakes easily with a fork.
Meanwhile, steam the broccoli until tender-crisp.
Roast the cubed sweet potatoes in the oven with a bit of olive oil for 20–25 minutes.
Serve the salmon with sweet potatoes and broccoli on a plate, and enjoy.
