Roasted Sweet Potato and Black Bean Bowl

Ingredients:

  • 2 cups cubed sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 1 tsp smoked paprika
  • Salt and pepper to taste

 

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potatoes with olive oil, smoked paprika, salt, and pepper.
  3. Roast for 25-30 minutes until tender and golden.
  4. In a bowl, combine the sweet potatoes with black beans, cherry tomatoes, and cilantro.
  5. Drizzle lime juice on top and serve warm.
