Lentil and Spinach Soup

Ingredients:

  • 1 cup dried lentils
  • 4 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 garlic cloves, minced
  • 2 cups fresh spinach
  • 1 tsp turmeric
  • 1 tsp cumin
  • Black pepper to taste

 

Instructions:

  1. Rinse the lentils thoroughly.
  2. In a large pot, simmer lentils, carrots, celery, and garlic in the vegetable broth.
  3. Add the turmeric and cumin while simmering.
  4. Stir in the spinach just before serving and season with black pepper.
