Chicken Stir-Fry w/ Bell Peppers and Snap Peas

Ingredients:

  • 2 chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 2 cups bell pepper strips (mixed colors)
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 2 cups cooked brown rice
  • 2 tbsp low-sodium soy sauce

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken strips and cook until golden brown.
  3. Stir in the ginger and garlic, cooking for another 2 minutes.
  4. Add the bell peppers, snap peas, and broccoli. Sauté until tender-crisp.
  5. Pour in the soy sauce and mix well.
  6. Serve hot over brown rice.
